KEY LIME CUPCAKES

I made these cupcakes with my mum in mind as Key Lime Pie is her absolute favourite desert and I thought they were the perfect cake to accompanying your summer BBQ's, garden parties or lazy days sunbathing. A light sponge with a beautifully refreshing lime infused buttercream make these the perfect summer's day treat.

INGREDIENTS
makes 12

175g caster sugar
175g unsalted butter

175g self-raising flour
3 large eggs
1/2 tbsp. baking powder
1 full lime zest
1 full lime juice

FOR THE LIME BUTTERCREAM

200g unsalted butter
450g icing sugar
1 full lime juice 

METHOD

  1. Pre-heat oven to 180C and line a 12 hole muffin tray with cupcake cases.
  2. Add the sugar, butter, self-raising flour and eggs into a large mixing bowl and beat until combined. 
  3. Add the baking powder, lime zest and lime juice to the mixture; mix on a medium speed for 2-3 minutes. 
  4. Pour the mixture into the cupcake cases, around 1 tablespoon per case.
  5. Place in the oven and cook for 18-20 minutes or until golden and springy to touch.
  6. Once baked place the cupcakes on a wire cooling rack. Whilst cooling make the buttercream frosting.
  7. Beat the butter on a high speed until it is lightly coloured and a creamy consistency.
  8. Add half the icing sugar and, starting on a low speed gradually increasing to a high speed, beat until combined.
  9. Add the rest of the icing sugar and as above beat until combined. Pour in the lime juice and mix on a high speed for 1-2 minutes.
  10. Transfer the buttercream to a large icing bag with your chosen nozzle; I have gone for the star nozzle here. Alternatively the buttercream can be spread straight onto each cupcake if you don't have an icing bag to hand.
  11. Once the cupcakes have cooled completely, pipe the icing onto each cupcake. Sprinkle with lime zest to decorate and serve!
